Low Carb Enoki "Pasta" {RECIPE}

The Story

I'm always looking for low carb versions of my favourite meals, but sadly a lot of times they miss the mark; how can you expect to get the satisfaction of a stomach full of soft spaghetti without... well... the spaghetti?

All of this is why I am excited to share what I made this week! This was so pasta-like it was incredible, and not only was it low carb, but it also came with a ton of health benefits 💃💃💃.

The secret: Enoki

Enoki is a type of mushroom widely used in China, Japan, and Korea. It is cultivated in low-light, CO2-rich environment, which causes it to grow long, thin, noodle-like stems. It is loaded with antioxidants and research by the National University of Singapore suggests that it contains proteins that can help regulate your immune system. But the best part is of course that they are low carb, allowing you to make a delicious and healthy enoki "noodle" stir fry!



The recipe

For protein I used soft tofu but you can replace it with a protein of your choice like prawns or chicken. You can also serve it on a bed of quinoa.

Ingredients

  • 1/2 of a red cabbage
  • 1/2 of a yellow onion
  • 3 baby bok shoy
  • 1 package of enoki mushrooms (stem bottoms cut off)
  • 10 ounces soft tofu
  • 1 tbsp avocado oil
  • 2 tbsp sesame oil
  • 1.5 tbsp tamari soy sauce
  • dried chilis to tasts

Preparation

  1. Chop the onion, cabbage and bok Choi into big pieces.
  2. Heat the avocado oil and add onions until translucent over medium heat.
  3. Add the cabbage and cook it for 5 minutes.
  4. Add the bok Choi and enoki mushrooms. Sprinkle with dry chillis and cook for another 5 minutes
  5. Add the soft tofu (or other protein) and cook for (yet another) 5 minutes.
  6. Serve!
