Ingredients

  • 4 Pears, peeled thinly sliced

  • 1 Cup Cranberries

  • 1 Tbsp Cinnamon

  • 0.5 Tbsp Pumpkin Pie Spice

  • 2 Tbsp Lemon Juice (about 0.5 Lemon)

  • 1 Cup GF Rolled Oats

  • 0.33 Cup Oat Flour

  • 1 Tbsp Cinnamon

  • 1 Tbsp Pumpkin Pie Spice

  • 0.33 Cup Coconut Oil, melted

  • 0.25 Cup Maple Syrup

  • Optional: 0.25 Cup Pecan Halves (or pumpkin seeds or sunflower seeds)

Directions

  1. Preheat oven to 375F, grease a medium sized casserole dish with a little bit of coconut oil

  2. In a large bowl combine thinly slice pear, cranberries, lemon juice, 1 Tbsp cinnamon, 0.5 Tbsp pumpkin pie spice until fruit is evently coated, then pour fruit mix into prepared dish.

  3. In a medium bowl mix together oats, oat flour, 1 Tbsp cinnamon and 1 Tbsp pumpkin pie spice, then mix in the coconut oil and maple syrup until combined evenly.

  4. Add in nuts or seeds, if adding

  5. Top evenly the fruit in the dish with the crumble topping.

  6. Cover the dish with foil and place in the oven to bake for 30 minutes.

  7. After 30 minutes, remove the foil and leave to bake for another 20 minutes.

  8. Serve with whipped cream or ice cream
