Whimsical Winter Shortbread
Ingredients
1 cup almond flour (not almond meal)
2 1/2 tablespoons coconut sugar
2 tablespoons coconut oil, melted
1 tablespoon water
1/8 teaspoon salt
Optional Variations:
Rosemary Shortbread Cookies: Add 2 teaspoons fresh chopped rosemary to the dough in step 2.
Lemon Shortbread Cookies: Replace the 1 tablespoon of water with 1 tablespoon fresh lemon juice and add 2 teaspoons lemon zest in step 2.
Directions
Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper.
In a medium bowl, combine all ingredients, stirring to break up any lumps in the flour or sugar.
Shape the dough into 12 balls (about 1 inch in diameter).
Place the balls on the prepared baking sheet, spacing them 2 inches apart. Flatten each ball to about 1 cm thickness using a fork or the flat base of a measuring cup.
Bake for 10–12 minutes, or until golden. Note: The cookies will be soft when hot but will firm up as they cool.
Remove from the oven and let cool on the baking sheet for 10 minutes before transferring to a wire rack to cool completely.
